Forking Delicious Food Truck Returns to Mitchell with New Flavors
Mitchell, SD — May 19, 2023 — Forking Delicious, a beloved food truck known for its innovative street food, has made its eagerly anticipated return to Mitchell this spring. Owner Kriston Walsh, who originally launched the truck in 2020, brings a fresh outlook and a new trailer following a brief hiatus in Fargo, North Dakota.
Walsh, who operated Forking Delicious through the 2022 season, relocated for a job with Starbucks but soon realized the limitations of a fixed schedule. "I realized that wasn’t the lifestyle I wanted," she remarked, prompting her return to the food truck scene, which she views as her true passion.
With a focus on scratch-made cooking, Walsh’s rotating menu features a vibrant blend of flavors from Mexican, Asian, and American cuisines. Notable items include the crowd-favorite birria ramen, made from slow-cooked beef in a rich consomme, and inventive dishes like shrimp tacos and pork and mac quesadillas. Her hand-cut "truck chips" remain a consistent favorite, quickly selling out at events.
What sets Forking Delicious apart is Walsh’s adaptability. With the ability to adjust her menu based on other vendors and customer preferences, she ensures that every outing offers something new and exciting.
Walsh also emphasizes community involvement, with her children often assisting during events. While she does not plan to establish a traditional restaurant, she dreams of opening a shared-use commissary kitchen for other food entrepreneurs and is considering family-style meal options for pickup in the future.
In Walsh’s words, "I don’t want to put myself in a box," capturing her commitment to culinary creativity and the vibrancy of the local food scene. Forking Delicious is set up at 209 W. Pine when not booked for events, promising a delightful culinary experience for Mitchell residents.
